2 more arsons last night

in our neighborhood. The Seattle fire department is now going to be patroling in our neighborhood & I've never been so happy to ride out tonight's fall rainstorm. Hard to light a match in the wind and rain.

I've been busy tonight: beef bones have been roasting, and are now simmering in water for beef stock. Tomorrow I have the day off. I only hope some moron with a lit match doesn't spoil it for me tonight.

Found money - $0.02 (floor of coffeeshop, parking meter)

    Please tell us a bit about about roasting bones for soup. I think I read of it in the Joy of Cooking, but I've never done it. These are bones from which the meat has mostly already been removed? And the roasting does something to get more flavor and color from the bones? Is it a money saving effort as well?

    Hmm, I'm going to have to try that. I heard that bone and bone marrow is great in a soup. So, yeah, would love to hear more about it myself!

    People are nuts. The lack of respect for human life in this country is incredible. We have a similar thing going on at Montclair State University in NJ, where 3 fires have been set on the 6th floor of a dorm in the last month or two and they haven't caught the person(s) yet. Scary...

    Arson is a terrible crime that leads to horrific consequences, and I hope they catch the perpetrators. Building owners have to be quaking in their boots, too, checking their fire insurance and hoping for the police and fire marshals to catch a break. People can be such idiots...
    On a happier note, have you ever tried using those beef bones to make Vietnamese pho soup? It's delicious and the perfect meal on a cold, wet day.
